This iconic rice dish, born from the ingenuity of local fishermen in the 19th century, is the heart of Mar Menor cuisine. Originally a humble meal cooked in a single pot (caldero) with unsaleable fish, it has been elevated to an art form. The rice, deeply flavourful from a rich stock of rockfish and sweet ñora peppers, is traditionally served separately from the catch. El Vivero is a graceful curve of fine, golden sand cradled by the unique geography of Europe's largest saltwater lagoon.
